Avocado Corn Salsa

Avocado Corn Salsa goes great on nearly every taco out there. Scratch that…you don’t even need a taco. Just grab some chips and dig in! We made this corn salsa along with grilled chicken. So, we took full advantage of the grill being fired up. If you don’t want to fire up the grill, use a skillet on high heat to blacken the corn.

Ingredients
Avocado Corn Salsa
- 4 ears sweet corn
- Olive oil
- 2 large ripe avocados diced
- 1 small red onion diced
- 1 small red bell pepper diced
- 1/3 cup fresh cilantro finely chopped
- 1 tablespoon garlic minced
- salt to taste
- pepper to taste
Instructions

Lightly coat corn with olive oil and lightly sprinkle them with salt and pepper.

Char corn on a grill or in a skillet coated with olive oil.

Cut the corn off of the cob and combine everything in a large bowl.
