Chipotle Chicken Skillet Tacos
We wanted a fresh take for Chipotle Chicken Tacos. So, in this recipe, we’ve brought out the skillet, chopped loads of fresh vegetables and whipped up our own crema! Make sure to have plenty of leftovers, because you won’t mind eating on these all week.
Chipotle Skillet Chicken Tacos
- 1 1/2 lbs boneless, skinless chicken breast
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp chili powder
- 1/4 tsp chipotle chili powder
- 1 tsp smoked paprika
- 2 tsp ground cumin
- 4 ounces feta cheese crumbled
- 1 cup cherry tomatoes quartered
- 1 avocado sliced
- 1/2 red onion finely diced
- 1/4 cup fresh cilantro chopped
- extra limes for garnish
- 1 lime juiced
- street style tortillas
Chipotle Lime Crema
- 1 tablespoon adobo sauce from a can of chipotles in adobo
- 3 tbsp mexican crema or sour cream
- 3/4 cup half and half
- 1/8 teaspoon salt
- juice of half a lime
- lime zest of half a lime
Preheat the oven to 375 degrees F. Heat a large oven-safe skillet (cast iron) over medium-high heat.
Lightly season the chicken breasts with salt and pepper. Add olive oil to the skillet and when it’s hot enough to coat the skillet, add the chicken. Give each side of the chicken brown a nice browning. This will take 2-2.5 minutes on each side.
Place foil over the skillet to cover it and move it to the oven. Let it cook for 20 minutes.
In a small bowl, combine cumin, chili powder, chipotle chili powder onion powder, paprika, and garlic powder.
In a separate bowl, whisk together the mexican crema (or sour cream) half and half, adobo sauce, juice of half a lime, lime zest and salt. Combine completely. Set both bowls aside until chicken is done.
Cut the cherry tomatoes into quarters and combine with chopped cilantro, juiced lime, red onion and feta cheese.
When the chicken is done, move the breasts to a bowl and shred with two forks. Add in the bowl of dry spices and mi fully. Place the chicken mixture back into the skillet.
Assemble tacos with the chicken first. Layer in the fresh tomato mixture and a generous drizzle of crema. Keep the sliced avocado and lime wedges near by for those who want them!
