Slow Cooker Fiesta Ranch Chicken Tacos

  • 3 lbs chicken breast
  • 15 oz can fire roasted tomatoes with green chiles
  • 15 oz can kidney beans drained and rinsed
  • 1/2 large onion diced
  • 1/2 tbsp smoked paprika
  • 1 tsp cumin
  • 1/2 tbsp chili powder
  • 1 package corn tortillas

Ranch Seasoning:

  • 1 tbsp minced dried onion
  • 2 tbsp onion powder
  • 1 tsp dried dill
  • 2 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp pepper


  • Lettuce
  • Cheese
  • Salsa
  • Sour Cream
  • Lime wedges


  1. Place the chicken in bottom of the slow cooker and cover in onions, fire roasted tomatoes, paprika, cumin, chili powder, and a can of water. Cook on medium high for 4-6 hours.
  2. Once fully cooked, shred the chicken using a fork. Add the beans and ranch seasoning to taste. Stir and taste until you like it!

Recipe Notes

If the chicken is too runny, leave the lid off and the slow cooker on low until the excess water evaporates.
