Not Your Grandmas Fried Chicken Tacos

Not Your Grandmas Fried Chicken Tacos
These tacos are definitely not your grandmas fried chicken tacos, but they are sure to satisfy like they were!
Ingredients
- 2 lbs Chicken tenders boneless and skinless
- chicken seasoning
- 2 cups flour
- 3 eggs
- 1 cup shredded cheddar cheese sharp or mild
- Vegetable oil
- 1 cup hot sauce we used mild La Victoria
- chili powder
Optional Toppings
- salsa
- queso
Instructions
-
In a cast iron skillet, heat the oil over medium-high heat to 350. Use enough oil that the chicken will sit halfway in.
-
lightly season the chicken tenders with the chicken seasoning.
-
Get ready two bowls. One with the flour and another for the eggs
-
Beat the eggs and hot sauce together.
-
Set up an assembly line for cooking the chicken in this order:
Egg mix, flour, skillet.
dip chicken in egg mixture, coat in flour, add to skillet.
-
Cook the chicken until lightly browned. It will brown a little more than normal because of the hot sauce, so don't worry about overcooking. This will take 6-8 minutes or until the chicken reaches the internal temp of 165.
-
Set chicken on a paper towel covered plate to soak up extra oil and to cool. Once the chicken has cooled a bit, slice into strips.
-
Build your tacos with the chicken first and then add your cheese. Top with any of the toppings listed and enjoy!
Recipe Notes
We added some of the crunchy bits that fell off in the skillet to the top of our tacos!
