Ingredients
- 4 1/4 inch-thick pork shops
- 1 large sweet onion sliced
- 2 tablespoons extra-virgin olive oil
- 4 teaspoons chile powder
- 1 avocado diced
- 1/2 cup cilantro leaves fresh
- salt and pepper to taste
- Sour cream and lime wedges for serving
- fajita sized corn tortillas
Instructions

fire up the grill to medium -high heat. Cut the union into round portions and cut in half. Prepare the pork chops and onion on a plate or baking sheet. Using a brush, brush the oil over the pork chops and onions and season with salt and pepper. Season the pork shops with the half the chile powder.

Start by grilling the onions first, cook until charred or about 8 minutes. About 4 minutes in, add the pork chops to the grill. Grill turning once, until just cooked through, about 2 minutes on each side.

Transfer the pork to the cutting board. Cut the pork into 1/2-inch strips or chop into cubes; transfer to a quart sized bag or small bowl. Add the remaining chile powder and mix in. Serve with the tortillas, avocado, cilantro, sour cream and lime wedges.
