  • lbs  ground beef
  • 1 tbsp olive oil
  • 1/2  sweet onion chopped
  • 1 Vine Ripe Tomato diced
  • jalapeno chopped
  • garlic cloves minced
  • oz  packet Taco seasoning
  • cups  Mexican cheese shredded
  • oz  cream cheese
  • 1 can refried beans
  • tsp  chipotle chili powder


  1. Preheat oven to 375
  2. Heat skillet over medium heat and add olive oil
  3. Dice onions, tomatoes, and jalapeno
  4. Add onions to skill at cook until they start to turn transparent.. Add jalapeño and cook for 2-3 minutes.
  5. Add garlic and tomatoes and cook until the garlic is fragrant.
  6. Add ground beef and cook until no longer pink. Turn and combine mixture often.
  7. Right before the beef is done add taco seasoning and finish cooking.
  8. Once meat is cooked, transfer all of the mixture to a mixing bowl. Add the cream cheese and stir with a wooden spoon until fully mixed in.
  9. Measure out 1 cup of Mexican cheese and combine with mixture.
  10. In the skillet, spread out a can of refried beans until the bottom is completely coated. Depending on your skillet size, the layer will be thicker. Adjust the amount used for your preferences.
  11. Slowly dump the mixture from the mixing bowl into the skillet over the beans.
  12. Measure the second cup of Mexican and shower your skillet mixture with the cheese. Use the Chipotle Chili Powder and sprinkle it over the cheese.
  13. Bake for 12 minutes, or the until cheese is melted and slightly bubbling.
