Panko-Crust Avocado Tacos

  • 1 Avocado
  • 2 tbsp flour
  • 1 egg beaten
  • 1/4 cup panko bread crumbs
  • Cooking spray
  • 1/2 tsp olive oil
  • 1 cup red cabbage shredded
  • 1/3 cup carrot shredded
  • 1 lime juiced
  • 4 corn tortillas
  • Salt to taste
  • Pepper to taste


  • Salsa
  • Fresh cilantro chopped
  • Pickled jalapeños
  • Shredded peppar jack


  1. Preheat oven to 400 degrees
  2. Cut avocado into fourths
  3. Beat egg in a bowl. Set out two separate bowls with flour and panko. Toss avocado slices into the flour, coat completely. Dip flour covered slices into the egg. Finally place into the panko bowl and cover slices completely.
  4. Spray a baking sheet with non-stick cooking spray. Place the coated avocado slices onto the sheet and lightly drizzle olive oil over them. Bake for 7 minutes and flip. Bake for 8 more minutes.
  5. In a bowl, shred cabbage and carrots. Add lime juice.
  6. During the last couple of minutes of baking, place tortillas onto Oven Safe Taco Tenders and add them to the baking sheet.
