Shrimp and Pineapple Tacos

Ingredients
- 16 soft corn tortillas
- 1 lb shrimp pealed and deveined
- 1/2 cup basil salid dressing
- Half a pineapple
- 1/2 cup monterrey jack cheese
- Fresh parsley
- 1 lime sliced into fourths
- 1/2 tbs butter
- 1/2 sweet onion sliced
Instructions

If frozen, thaw shrimp in a large bowl of warm salt water. Once thawed, drain the shrimp and add basil dressing. Let sit while prepping pineapple.

Cut the pineapple into rings and slice in half.

Heat butter in a large skillet of medium heat. Add pineapple and slightly brown each side. Set the pineapple aside.

Add shrimp to the skillet and cook until pink on all sides of the shrimp.

Serve with toppings to the side. Squeeze limes over tacos just before eating.
