Simple Beef Brisket Tacos

We love crock-pot recipes and we love these simple beef brisket tacos. This is another great recipe that you can combine everything in the crock-pot and let it cook all day. Dinner can't get any easier than this! We've created a lettuce and cabbage combo topping that bring this recipe to perfection. Juicy beef meets crunchy fresh veggies and you are going to love it too!

Ingredients

Crock-pot Ingredients

  • 2 1/2 lbs Beef Brisket fat trimmed
  • 7 oz light beer like corona
  • 1 can Rotel
  • 1 packet of Au Jus mix
  • 2 tbsp Worcestershire Sauce
  • 1 tsp ground Cumin
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Fresh Veggie Topping

  • 1/2 cup Cabbage chopped
  • 1/4 cup Red Cabbage shredded
  • 1/2 cup Romain Lettuce chopped
  • 1/4 cup Carrots shredded
  • 4 Green Onions chopped

Optional Toppings

  • Mexican Crema
  • Hot Sauce
  • Salsa

Instructions

Marinate

  1. Mix all of the crockpot ingredients except for the brisket together in a large ziplock bag. Once fully mixed add the brisket and shake until fully coated. Marinate in the fridge overnight or for at least 8 hours.

Crock-pot Time

  1. Transfer the brisket and the marinade into a crockpot. Cook on low for 8-10 hours.

  2. Remove the brisket from the crockpot, leaving the juices behind. Shred the brisket with a fork.

Fresh Toppings

  1. Chop and shred veggies as described in the ingredient list. Mi together in a medium-sized bowl.

Serving

  1. Serve with the brisket in the taco first. Top with fresh veggie mix and add other toppings as desired.

Recipe Notes

Add the juices from the crockpot back into the shredded meat if you don't mind a dipping but even more delicious taco!
