Steak and Bacon Tacos

  • 1.5 lbs Skirt Steak
  • 1/2 package Bacon
  • 2 Onions diced
  • 6 cloves Garlic minced
  • 1/2 Green Bell Pepper
  • 4 Vine Ripe Tomatos diced into large pieces
  • 1/2 cup Fresh Cilantro chopped
  • 1 cup Monterey Jack Cheese Shredded
  • 2 limes wedges
  • Salt and Pepper to taste
  • 16 Fajita Size Torillas


  1. Prepare steak on a plate by gently seasoning with salt and pepper. Rest uncovered at room temperate for 1 hour.

  2. Fire up the grill to medium-high heat. Grill the skirt steak until brown with about 5 minutes on each side. For medium-rare cook until 120°. Move cooked steak to a clean plate to rest while cooking the rest of the vegetables.

  3. Turn broiler on at high setting. Cook bacon in a large skillet.

  4. Using the same skillet and leftover bacon grease add onions and cook until soft. Add bell peppers and cook until onions are golden brown. Add the tomatoes and garlic to the skillet and cook down until it turns into a thick sauce(10-15 minutes). 

  5. Slice steak in small pieces and chop the bacon. Set some bacon aside for a topping. Add steak and bacon to the skillet and cook just enough to reheat the meat.

  6. Top with cheese and bacon and broil until the cheese melts.

  7. Spoon directly into tortillas and add a freshly squeezed lime juice.
