Ground Beef Taco Skillet

A different way to enjoy a beef taco, but just as delicious. This Ground Beef Taco Skillet can be made using one cast iron skillet for less of a cleanup.

  • lb  ground beef
  • medium yellow onion diced
  • cloves garlic minced
  • medium red bell pepper cored, seeded, and diced
  • 15-ounce can pinto beans, drained and rinsed
  • tbsp  tomato paste
  • tsp  ground cumin
  • tbsp  chili powder
  • tsp  dried oregano
  • tbsp  olive oil
  • 1/2  tsp  sea salt
  • 1/4  tsp ground black pepper
  • 16 ounces  salsa
  • 1 1/2  cups  shredded Monterey Jack cheese divided into 2 piles
  • cup  chopped lettuce
  • medium tomato diced
  • sour cream for serving


  1. Pre-heat oven 350℉.
  2. Heat medium sized cast iron skillet over medium-high heat. Add a tbsp of olive oil to the skillet and start cooking the onions and peppers. When the onions start to turn transparent add the ground beef and cook. Break up beef as it cooks so that there are no large chunks. Cook until browned or 6 to 8 minutes. Drain grease and return everything to the skillet.
  3. Add beans to the skillet and combine the spices, garlic and tomato paste. Stir to combine and cook for 2 minutes, careful not smush the beans.
  4. Remove the skillet from the heat and stir in the salsa and one of the piles of cheese. Once fully combined, spread the mixture until its and even layer in the skillet. Sprinkle the remaining pile of cheese over the top.
  5. Place the cast iron skillet in the oven and bake until the cheese is melted and taco mixture is heated through, about 20 minutes. Let sit for 5 minutes before serving to let it thicken more.
  6. Scoop taco filling into a taco and top with lettuce, tomato, and sour cream.
